There are three things that I love about the almond cookie recipes below; a) They are high in protein and super healthy, b) They curb your cravings and it feels like you are treating yourself with something sweet and tasty, c) the healthy fats are also a craving buster. Oh, and one more thing that I really like… they are super easy to make.

We all have to eat to survive. I guess that’s the problem. Why is that a problem, you’re wondering? It’s an issue because, while we know we should “eat for fuel”, we often end up “eating for taste”.
The typical body sculpting fitness diet is filled with chicken, fish, lean cuts of beef, vegetables, whole grains, and protein powders. There’s not a lot of room for sweets and treats. In the past, that was somewhat of a problem for me because I like tasty food and love my desserts. So, when I first got into the body sculpting lifestyle, I thought all the delicious foods I used to eat were now off limits.
Of course, I found a way around this. I decided to combine high protein cottage cheese with some of my favorite flavors. Voila, I had a tasty treat that I could eat without guilt!

ALMOND COOKIES
** I provide three versions so you can use the one that applies to your calorie level for the day.
Version 1
Ingredients:
1/2 Cup Friendly’s Whipped Cottage Cheese
2 packets Truvia
1/8 Teaspoon pure Almond Extract
a) mix all ingredients together well
b) roll small spoonfuls of cottage cheese mixture into balls
c) freeze for 20 minutes
Calories: 90
Fat: 1 g
Carbs: 10 g
Prot: 16 g
Version 2
Ingredients:
1/2 Cup Friendly’s Whipped Cottage Cheese
2 packets Truvia
1/8 Teaspoon pure Almond Extract
1/8 Cup Raw Almond Slivers
a) mix all ingredients together well
b) roll small spoonfuls of cottage cheese mixture in almond slivers until fully covered
c) freeze for 20 minutes
Calories: 184
Fat: 8.8 g
Carbs: 13.1 g
Protein: 19.6 g
Version 3
Ingredients:
1/2 Cup Friendly’s Whipped Cottage Cheese
1 packets Truvia
1/8 Teaspoon pure Almond Extract – optional
1 Teaspoon Almond Butter
Splash Amaretto
1/8 Cup Raw Almond Slivers
a) mix all ingredients together well
b) roll small spoonfuls of cottage cheese mixture in almond slivers until fully covered
c) freeze for 20 minutes.
Calories: 228
Fat: 11.5 g
Carbs: 14.1 g
Protein: 20.8 g
So, the bottom line is, yes, food is fuel. But that doesn’t mean it can’t be fun and tasty at the same time. With just a little imagination and some creativity, you can make your meals enjoyable and healthy at the same time. Since healthy eating is part of a healthy lifestyle, and a lifestyle is long term, it’s well worth your time to spice up your life a little! Make “fueling up” an enjoyable process!
